Not far from the Capitol building but with surprisingly scant parking lies Rubicon. The converted old building now features a cozy bar and an enclosed but visible brewhouse. The 20 barrel system is composed of a custom Mash and Boil Kettle. Both 20 and 10 barrel fermenters share the load. All beers get a single Ale yeast strain (Sierra Nevada) and see a 10 day turnaround time. About a dozen varieties of pellet hops see use. Most beers are filtered before being kegged or served at the bar. The crowd tends to be about 75% male and most nights draw good crowds. Standard beers include the Wheat, IPA, Amber and Stout. Rubicon has long beer known in Northern California brewing circles and remains an attraction today.
